MUSH BANANA BREAD, GLUTEN + DAIRY FREE

MUSH BANANA BREAD, GLUTEN AND DAIRY FREE
YIELDS 10-12 SLICES
- 2 (170g) pods VANILLA BEAN MUSH
- 3 medium ripe bananas
- 1 tsp pure vanilla extract
- 1 egg (keep out if vegan)
- 3 Tbsp coconut oil, melted
- 3 TBS HONEY
- 3 1/2 tsp baking powder
- 3/4 tsp sea salt
- 1 tsp ground cinnamon
- 1/2 cup unsweetened almond or dairy-free milk (Ripple, Califia, Malk, etc.)
- 1 cup+ almond meal/flour
Preheat oven to 350 degrees F and grease a 9x5 inch loaf pan with coconut oil
Mash banana in a large bowl. Add all ingredients through dairy free milk and whisk vigorously to combine. Lastly, add almond meal/flour and Vanilla Bean MUSH and stir.
Pour into a loaf pan. Bake for 1 hour – 1 hour 15 minutes. When ready, it should feel firm and be golden brown on top. **If top starts to brown too quickly, place foil on top for last 15 minutes of baking.
Let cool completely before cutting or bread may fall / cave.
RECIPE NOTES Serve plain or with fixings of your choice (butter, coconut cream, honey). Store leftovers in a covered container for up to a few days. Slice and freeze for longer term storage.
